Hailey’s Scrambled Eggs

WARNING: NOT VEGAN. CAN BE MADE VEGETARIAN
Ingredients:
2 eggs
4 Mushroom caps
1 oz shredded cheese
1 cups spinach
2 slices Turkey lunch meat
Pepper
¼ teaspoon Everything but the bagel seasoning
Milk or water (optional)
Recipe:
Dice mushroom caps and turkey slices. Cut up spinach. If needed shred cheese. Crack the eggs into a cup. Heat up a pan over medium/low heat and spray a non-stick spray. (I also recommend a non-stick pan) Whisk eggs with a fork or whisk. Add pepper and The Everything but the Bagel Seasoning (can optionally add milk or water to mixture. However, I do not personally do this) To the pan add in the turkey and mushrooms. Cook until slightly brown. When slightly brown add spinach. Let spinach cook and shrink down. After about a minute add egg scramble mixture. Scramble eggs until almost done, add shredded cheese. Mix to better incorporate. Let the cheese melt and allow the last bit of egg to finish cooking. Slide onto a plate and enjoy!!
